Itanoni--flor del maiz

As discussed in Viva Oaxaca, Itanoni is a restaurant with a philosophy. Its owners, Amado Ramirez Leyva and Lea Gabriela Fernández Orantes, believe that corn--domesticated some 9000 years ago in Mexico--is the basis of Mexican culture. All of their dishes--memelas, tetelas, tostadas, tacos, etc.--involve carefully selected types of native corn, maiz criollo, that are best suited to what's being served and are prepared by hand every day. Diners can chose their favorites from among a dozen or so fresh and savory fillings.

Until now, people seeking out Itanoni's simple, inexpensive and delicious dishes had to make their way to the couple's open-air restaurant at Belisario Dominguez 513-Bis in Colonia Reforma. But as of November 21, 2005, visitors to Oaxaca can eat at Itanoni's new branch at M. Bravo 104, in the heart of town.
